| Description: | Cellulose gel is also known as MCC Colloidal grade, and is not the same with Cellulose Gum or CMC (Carboxymethyl Cellulose). It’s main function is a stabilizer for food and beverages, but also functions as secondary emulsifier, opacity enhancer, fat and water binder, etc. Cellulose gel is a product of copolymerization of MCC and CMC. The copolymerization s MCC particles coated with CMC. The result is a stabilizer with a unique characteristics. Unlike CMC, cellulose gel is not soluble but dispersible in water. It exhibits weak gel thickening behavior while having a good suspension ability. Although the unique and outstanding characteristics, in some products and applications, cellulose gel alone is not sufficient. | |
